I made chawanmushi to go with Meia's mee suah yesterday and she quite liked it. Here's how I make the chawanmushi : -
Ingredients
1. 3 Eggs
2. 1/2 cup of chicken stock
3. 1 shitake mushroom (diced)
4. 1/2 teaspoon sugar
5. Pinch of salt (for taste)
Method
1. Beat the eggs together with the salt n sugar
2. Use a strainer n strain the eggs. Discard the left over thick egg whites
3. Pour the chicken stock into the bowl, then add the eggs and the mushrooms
4. Cover the bowl with cling wrap, to prevent bubbles before steaming for 10 mins on medium heat.
