Chicken Fried with Dried Chilli




As my maternal Grandma names it.... This simple yet tasty dish is often seen laid on the dinner table. It is one of my favourite dishes and Ah-ma sure knows it very well. Will always remember the taste, the tenderness of the chicken.... YUM!!!!

I tried cooking it myself the other day. Didn't taste as good as Ah-ma's. Anyway, here's my version... think I didn't add the Knorr Chicken powder seasoning...

Ingredients
1. 1 boneless chicken thigh
2. 4-5 stalks of dried chilli (wash and cut into half)

Marinade
1. 1 Tablespoon of light soya sauce (according to your taste, if you're using more than 1 thigh maybe can add slightly more)
2. Pepper to taste
3. Chicken Powder seasoning (Optional)
4. Corn flour or Potato Starch Powder (I used Potato Starch to tenderise the chicken)

Steps
1. Cut chicken thighs to cubes and Marinade for half a day (or overnight if you like)
2. Heat oil till wok is hot, stir fry the dried chillies for 1 min then pour in the chicken. Stir fry till cook.

* I added a dash (half a teaspoon) of Dark Soya Sauce for colour halfway while stir frying.

Nyonya Dish (Ayam Chin)



My Maternal Granny, who's a nyonya taught me this dish (which is also one of my fav) AYAM CHIN. I haven't cooked it for a few months and that day I suddenly had the inspiration to cook it. 


It didn't taste as good as my grandma's, but it came close in taste... seems like I've missed something out... gotta ask my grandma again before I post the recipe.

Happy 49 months Lil Meia

Another month has passed, Meia is 49 today... Happy 49 months Little Cupcake.

Lunching Outdoors

It was a pretty nice weather and I decided to bring Max out together with me to fetch Meia from School.  As we still have almost 45 mins to dismissal, I decided to feed Max the homemade Char Siew Rice.

We found a bench in a nice shade, plonk ourselves down and a very happy Max excitedly stretched himself out.  I 'parked' the stroller and took out his lunch box and spoon.  We haven't eaten lunch outdoors for quite some time, guessed he misses it... so let's just let the pictures do the talking.

I enjoyed our quality time together too!

Lil Max

Little Max is growing up day by day and seeing him just makes my day!  Why  I say, its because my son and I share a very special bond.  When the kids are out (hubby and I at home) and when they're back, while Meia usually calls for her PAPA (when he's in) Max will without fail call me from the gate, or when I come back from marketing or other errands, he'll immediately slide the gate open and run to hug me! :) 

Many people tell me that boys would usually be closer to their mommies... well, I won't know until he's older, would he still hug and love me this way? 

But whatever it is, I'll always love my little boy!

Happy 25 months
